The BEST Microwave Mug Brownie

My favorite coffee mug doubles as my favorite brownie mug!
I'm obsessed with microwave mug brownies, and I've even got my mom & aunt addicted! They're more economical and individually portioned so you don't go crazy and eat a whole tray of freshly baked brownies. So far I found my favorite recipe from CookingClassy.com (the link to the actual recipe is at the bottom).  Customize your brownie by adding nuts, candy, chocolate chips, peanut butter chips, marshmallows, ice cream, caramel... the sky's the limit!  I've included my own favorite substitutions to make the recipe Gluten-Free (GF) and/or Vegan (V).  Play around and see what works best for you! Enjoy!

Microwave Mug Brownie
Prep Time: 2 minutes - Cook Time: 3 minutes

Optional Ingredients:
  • 3 Tbsp chocolate chips (V sub. dark chocolate)
  • For Microwave Brownie Sundaes:
  • Serve with ice cream (cookies and cream, vanilla bean, chocolate or caramel)
  • Drizzle with chocolate sauce or caramel sauce and sprinkle with sea salt, if desired
  • Add butter and brown sugar to a 12 oz (or larger mug). Heat in microwave on HIGH power 45 seconds, then remove from microwave and stir mixture with a fork. Mix in egg and vanilla extract. Stir in cocoa powder. Add flour, baking powder and salt and stir until well combine. Mix in chocolate chips. Set microwave on 50% power and cook mixture 1 minute 50 seconds - 2 minutes 30 seconds (time will vary based on varying microwaves wattage, don't overcook or it may result in a tough brownie). Serve warm topped with ice cream and chocolate sauce or caramel sauce and sea salt, if desired.

If you need a whole tray (for guest of course...) I highly recommend Bob's Red Mill Brownie Mix.  It's better than any other box brownies I've tasted!  The mix itself is Vegan as well.  Here is the recipe from their website:

"Our Gluten Free Brownie Mix is one of our most popular mixes and we hear numerous new ways of making it. When you’re feeling creative and in the mood for a chocolaty treat, try some of these alterations. It’s amazing how one mix can be so versatile!"

Gluten Free Brownie Mix Instructions

The basic instructions to make the brownies.
  • 3/4 cup warm (110°) Water
  • 2 tsp Vanilla
  • 1 Egg
  • 3/4 cup or 1-1/2 sticks Melted Butter or Margarine
  • 3 cups GF Brownie Mix

Preheat oven to 350°. Spray 13 x 9-inch pan with cooking or baking spray. Place Bob's Red Mix Gluten Free Brownie Mix (one 21-oz package) in large mixing bowl.

Beat in butter or margarine, egg, vanilla and warm water with electric mixer on medium speed until just combined.

Stir in 1/4 cup chocolate chips and/or 1/4 cup chopped walnuts or pecans (optional).

Spread batter in prepared pan and bake for 20-25 minutes or until toothpick inserted in center comes out clean. Cool brownies thoroughly. Cut and serve. Makes 16 brownies.

*You can use 1/4 cup Applesauce and 1/4 tsp baking powder, or blended Silken Tofu as an egg replacement.

  • Use just 1/4 cup of butter (or Vegan substitute) along with 8 oz. of applesauce to cut down on the amount of fat. This may need a little bit more oven time so it can cook through.
  • Add coconut flakes, chocolate chips, walnuts and/or pecans for a fun twist.
  • Drizzle caramel over the entire surface of the brownie batter once in the pan. Use a wooden skewer or the tip of a knife to “stir” the caramel into the batter to ensure it sinks in. You should have a pretty, swirly design on top. For an extra kick, sprinkle 1 tsp. of sea salt on top before baking.
  • Use skim milk in place of the water and add a tablespoon of peanut butter.
  • Layer flat chocolate pieces in the middle of the brownie batter before baking.
  • Top with a chocolate frosting by melting together a bag of chocolate chips and a can of sweetened condensed milk.

November Wishlist: Fall Fashion

The theme for this months wishlist is Fall Fashion.  Dark colors, sheer 90s throwbacks, witchy style, casual gothness, colorful tights & leggings, and most important of all, warmth!
I find many of these things on Wanelo, be sure to follow me there!
Whimsy & Goth meet harmoniously in the Jeffrey Campbell Unicorn Princess Heel from ModCloth.com.

I'm completely obsessed with the Fan Girl Ear Cuff from NastyGal.com.  Apparently I'm not alone, as they are currently sold out!  Figures...

Harness Bra by the architecturally inspired Chromat Garments: Structural Experiments for the Human Body.  What makes this high end, concept designer super cool?  She uses model Allison Harvard from ANTM - I was a big fan of hers on this guilty pleasure show of mine...

A nod to the 90s and oh-so-practical in the Autumn chill, the Aran Tall Sock by Free People will soon be mine.

The Renee Star Dolman Top with pentagram elbow accents gets two thumbs up for its homage to the witch and comfy oversize fit.  From GypsyWarrior.com

Death Eater Leggings?  This HP nerd says, Yes Please!  One of many exceptionally fantastic set of leggings from BlackMilkClothing.com (who also has tons of HP themed fashion).

I know, who would wear a sweater with an exposed back in sweater-weather, right?  The girl with the full back tattoo, says Akima and Urban Outfitters!

More 90s style with an Autumn flair and you have these Red Patent Dr. Martens 1460 8-Eye Boots. These never go out of style!  Lucky for me they built a store in Philly last year, we've already bought a couple pairs there.

My Sanctuary Space: Etsy Treasury

This is my collection of handmade & vintage Etsy goodies for my ideal in-home retreat. Create your own personal sanctuary to escape from the world outside!  I think everyone should have a place like that, even if its just alone in your bedroom for an hour with a good book & the door closed. Personally, I love the color combo of blacks, grays, muted greens & purples - with a botanical, goth, industrial, Victorian edge. Enjoy!

What would you put in your own private relaxation space?
Please comment below with links if you have them! :)
